4.15.12 Dinner

Tonight I had THE BEST dinner! I am excited to share this recipe with you.

I found this recipe via Pinterest (and my changes are below!)

Salmon with Avocado Salsa

Ingredients (for 4 people):

2 lbs salmon, cut into 4 pieces - I just used 3/4ths of a lb of salmon (2 servings)

1 tbs olive oil

1 tsp salt

1 tsp ground coriander

1 tsp ground cumin

1 tsp paprika powder

1 tsp onion powder

1 tsp black pepper

Avocado salsa

1 avocado, peeled, seeded and sliced

1 small red onion, sliced

3 mild hot peppers, seeded and deveined, diced or sliced - I used one jalapeno with no seeds.

Juice from 2 limes - I used one lime (because my serving was smaller)

3 tbs olive oil - This was way too much for just 2 servings, I used a little drizzle of it.

2 tbs finely chopped cilantro

Salt to taste

Preparation:

  1. Mix the salt, coriander, cumin, paprika, onion and black pepper together, rub the salmon fillets with olive oil and this seasoning mix, and refrigerate for at least 30 minutes.
  2. Pre-heat the grill.
  3. Combine the avocado, onion, hot peppers, cilantro, lime juice, olive oil and salt in a bowl and mix well, chill until ready to use.
  4. Grill the salmon to desired doneness & top with the avocado salsa.

I consider my husband a real "grill master" and his specialty is smoking meats. I asked him if he could please smoke my salmon instead of grill it, and he smoked it to perfection! He used hickory chips and smoked the salmon for 45 minutes. It had a great smokey flavor but was still moist. Yum!!!

The avocado salsa was really good. I think I will make it again on it's own to eat with whole wheat tortilla chips.

For a side, I combined quinoa with black beans and spicy Rotel. I sprinkled a little bit of parm cheese on top.

I'll definitely be making this again!

  1. This looks delicious Bryn! I'm vegetarian, so I'll attempt some kind of vegie-based fritter as a substitute, but I think my husband will love the salmon. Well done on the new blog and new eating habits!

  2. So, I came over here from your interiors blog... because I saw the Quinoa side! Quinoa is my new favorite food. Seriously. Just tonight I made a quinoa salad. Quinoa, black beans, sweet corn, orange bell pepper, green onions, salt, pepper, and a drizzle of olive oil and balsamic vinegar. Love it.
