I met Matt at Jimmy John's today for lunch and had my favorite Slim 5 with wheat bread. Yummmm....

Tonight we got a little creative with dinner.

Pictured above is the "healthier" potato salad we made on Saturday. We used a little bit of light sour cream instead of mayo.

Well I came across this recipe of Broccoli Cheese and Potato Soup and thought - hey we can use our leftovers for that!

I combined our potato salad leftovers with two cans of chicken broth, 1 cup of 1% milk, an whole package of frozen broccoli and 1/2 cup of 2% cheddar cheese in a pot on the stove. We blended it just a little to get that broccoli soup texture, and it turned out really good! And it was much healthier than the old baked potato soup that we used to make (think heavy cream, LOTS of cheese and LOTS of bacon).

For dinner I had my leftover shrimp chopped up with salsa, cilantro and salsa in corn tortillas. It reminded me of shrimp tacos from California!

(whenever I blog from my phone it puts my photos out of order. But if you are reading this I'm sure you can figure out which meal is which)

4.28.12 Dinner

Last night we had plans to go to our monthly Dinner Club but we couldn't make it because Matt had to drive to Durham and back to help his brother sell his car and I had to work late on a presentation.

Instead, we had a casual dinner over at our neighbors house that ended up turning into a late night ;) What you don't see pictured is 4 glasses of Prosecco, eek!

I made the avocado salsa again, I love it!

Our neighbor grilled some chicken and we provided the side. We made a healthier version of Potato Salad with no mayo. Here is the "recipe":

Lightened Potato Salad

- Boiled cubed potatoes
- Bacon
- Broccoli
- Chives
- Shredded Cheese
- Light Sour Cream
- Salt & Pepper

We used light sour cream instead of mayo and it turned out really good!

4.28.12 breakfast & lunch

For breakfast I has a couple handfuls of my Bear Naked granola and my daily coffee.

For lunch I stole some of Matt's leftover chicken and made a really good "salad" with my leftover quinoa and feta.

I have to admit - I LOVE love love cheese. And this feta is really good and pretty healthy for cheese! I took pics of the packaging and nutrition info so you could see. I really like it!

I usually pack my lunch, but sometimes on Fridays Erin and I split a southwest chicken chopped salad.. our favorite! It's so good!! And I don't feel TOO guilty since we split it (half a serving is shown below.. they are normally huge!)

Since starting this lifestyle change, Matt and I have really enjoyed cooking a "special" meal once a week. We each make something different, like we would have at a restaurant. Tonight I had grilled shrimp and quinoa and it was so good! photo

The recipe for the spicy garlic shrimp is from HERE. I made up the quinoa "recipe" and it turned out really good. Here is what is in it:

- Quinoa (cook per package directions)
- Chopped cilantro (I can't get enough of cilantro)
- Chopped scallions
- Sriracha sauce
- Juice of half a lime
- Feta Cheese

I just mixed it all together and it turned out wonderful!

Matt made himself chicken tacos with fresh grilled corn off the cob. His chicken tacos looked really good, I told him to save me some for leftovers :) (except I don't particularly like corn.. I'd use black beans instead).

I was really craving dessert, so I chopped up a banana, sprinkled cinnamon on it and drizzled in honey. You guys... it was GOOD. Really really good. And I don't feel guilty about it!

I'm off to book club tonight where there will be pizza served. I hope I can practice portion control! :)

Also, we really need to go to the grocery store so my meals today were pretty pathetic. I was so hungry around lunch I forgot to take a picture of my popcorn! It was a full serving (according to the bag).

Today was a crazy one.. I had a morning full of meetings and then drove back up to High Point for another day at market. I ate lunch at one of the showrooms.. They had it catered and I had some really good chicken noodle soup.

I had good intentions of eating leftovers when I got home, but I was starving as I was leaving and wouldn't get home for another hour and a half. I saw a Sonic and said what the hell... I hadn't been in forever and I walked my ass off today! I got a grilled cheese sandwich. It was worth being a little bad :)

Our local grocery store sells these hummus and pretzel thin packs... they are so good!!

Tonight Matt made turkey meatballs and whole wheat pasta for dinner, it was sooo good! This is the recipe he used for the turkey meatballs:

TURKEY MEATBALLS
  • 20 oz (1.3 lb) ground turkey breast 99% lean
  • 1/4 cup whole wheat seasoned breadcrumbs (we used Whole Wheat Panko instead of breadcrumbs)
  • 1/4 cup Reggiano Parmigiano cheese, grated
  • 3 tbl Italian seasoning
  • 1 egg (Matt used 1/4 lb eggs whites)
  • 1 large clove garlic, crushed
  • 1 tsp kosher salt + fresh pepper
They meatballs were so tasty, I would have never thought it was ground turkey.

We used marinara in a jar, but we made sure to pick the healthiest one we could find at the store. Be careful! Some brands have a ton of oil and sugar hidden in them.

4.23.12 Dinner

Matt grilled some spicy chicken yesterday but I missed it since I was at market so late. We had leftovers tonight and it was so good!

I had avocado, salsa, chopped cilantro and half a slice of cheddar on mine. For dessert I had a banana.

There was no post yesterday because I spent the day at High Point Market (a trade show for designers). The showrooms have food and snacks so I snacked a little bit all day. And I was so busy I didn't take any photos!

Being an interior decorator, I am always in my car driving around to clients homes and stores (which is why I got into a bad fast food habit!) Here is a picture of the food I brought along with me today for breakfast/lunch/snacks.

Ps- that is water in a red cup.. Not Kool Aid :)

Today I ran some errands that ended up taking longer than I anticipated. I didn't bring any food with me. I ran through the taco bell drive through and got their fresco chicken bean burrito.

Later Matt and I made homemade pizzas with wheat dough. Mine had crushed tomatoes, fresh mozz and a drizzle of olive oil with fresh basil.

4.19.12 Dinner

4.19.12 Breakfast & Lunch

I don't really like raw celery so I didn't end up eating it. I was still hungry after the carrots and cheese so I popped some natural popcorn. I really love this brand.. It's all natural with just salt and oil. One cup of popped popcorn has 30 calories and 2g of fat. If I want popcorn for my whole meal I will eat 4 cups. Here I am just having 2. I love this for when I need to satisfy my salty cravings!

Last night (4.18.12) I went to an event so I anticipated dinner would be a bit iffy. They were passing around some bite-sized appetizers and I ate two or three, but I left the party STARVING. Across the street was a Jimmy Johns (LOVE that place) so I grabbed a Slim 5 to go and ate it on the way home. Not the most healthiest thing in the world (isn't their white bread so tasty??) but oh well.

Also, my sweet client gave me chocolate cupcakes from a local bakery. I tried to get Matt to eat his with me, but his will power was better than mine. It was yummy ;) Yesterday wasn't the healthiest of days for me, but I will be good today and try to get to the gym.
